I always try to have berries in the refrigerator because of their health benefits. Sometimes they start to go bad before we can eat them all.
I came up with this recipe as a great way to use them up (instead of feeding them to the chickens) and it makes a delicious and super quick dessert!
This recipe is 4 servings, using 4” Ramekins
Frozen fruit would work as well.
Ingredients:
- 4 cups of berries, sliced strawberries, raspberries or blackberries (you could do a mix)
- 1 teaspoon of cornstarch
- ½ cup brown sugar
- ½ cup all-purpose flour
- 1 teaspoon cinnamon
- ¼ cup walnuts, chopped
- 6 tablespoons unsalted butter, chilled and cubed
- ¼ cup quick-cooking oats
Directions:
Preheat oven to 400 degrees
Place berries and cornstarch in bowl and stir.
In another bowl combine sugar, flour, and cinnamon. Make sure to break down any sugar clumps by smashing down with back of spoon. Divide in half.
Put half of the mixture in with strawberries and stir to coat. Put any remaining mix back in with the first half.
Place strawberries in ramekin and mound in middle
Add butter, walnuts and oats to sugar mixture.
Top strawberries with mix.
Bake for 15-18 minutes, mix should be golden brown.
Allow the crumble to rest for 8-10 minutes. That way the topping can trickle down through the berries.
Of course a big scoop of Vanilla Bean ice cream on the side wouldn’t hurt….

THis one sounds really good!!
This looks great!! I’ve made a few berry crumbles before in large casserole dishes and I really like your idea of making them in individual ramekins. I’ll have to try this next time.
