Ooey-Gooey Pecan Bars

With all the Derby Parties coming up this weekend I thought I would share a recipe that everyone will love, that is if they like sweet enough to make your teeth hurt pecan bars!!  Let me make this clear…**this is not a healthy dish, in any way… shape…or form** so only have a little and share a lot.

Ooey-Gooey Pecan Bars

Ingredients
  • 3 sticks of butter, room temperature (yea I said 3)
  • ⅓ cup sugar
  • 1 egg, room temperature
  • ¼ teaspoon of vanilla extract
  • 1⅓ cup of all purpose flour
  • ⅓ cup honey
  • ⅓ cup of light brown sugar
  • 1 teaspoon of lemon zest
  • 2 cups of chopped pecans

Instructions
  1. Preheat oven to 375 degrees.
  2. Line a 9″ square baking pan with foil so that it overhangs and spray with baking spray.
  3. Add one stick of butter to mixer and sugar, beat on high till whipped. Lower speed and add egg and vanilla.
  4. Add flour until just blended and dump in pan. Use fingers and press down until entire bottom is covered. Poke all over with fork.
  5. Bake for 15 minutes. Remove and allow to completely cool.
  6. In a medium saucepan over medium heat melt butter, add honey, sugar, zest and bring to a light boil, stirring constantly. About three minutes. Remove from heat and add pecans. Stir to mix.
  7. Pour over cooled crust and bake for 25 minutes.
  8. Pecan mix will be bubbling. Remove to cool on wire rack for about 15 minutes. Place in refrigerator for an hour, or until completely chilled.
  9. Grab foil ends that are overhanging and remove from pan. Place on cutting board and cut into squares.
