Chocolate Fig Bites

My new addiction is adding figs in my meals.  Figs are loaded with Potassium and fiber as well as being a decadent sweet fruit that you thoroughly enjoy eating.  Potassium a mineral that helps to control blood pressure and muscle recovery after a hard workout.

These little chocolate fig bites are perfect to enjoy when you need you are having your sweet cravings.  You don’t have to feel guilty about eating them as they are gluten-free, dairy free, soy free and paleo.  I also enjoy putting them in my smoothie for the added nutrition and flavor.

Chocolate Fig Bites

I did find that keeping them in the refrigerator helped to keep them firm and they will last much longer.  Not that they will be around long, mind only lasted a few days.  Every time I opened the refrigerator a few more were missing.

Chocolate Fig Bites

Warning: These Chocolate Fig Bites are addictive. They are also gluten free, dairy free, paleo and loaded with potassium.

Ingredients

  • 14 ounces dried Mission figs stemmed and coarsely chopped
  • 2 tablespoon creamy unsalted almond butter
  • 1 cup semi sweet chocolate chips I used enjoy life brand
  • 2 teaspoon coconut oil
  • Seas salt for garnish, optional

Instructions

  • Line a small baking sheet with parchment paper. Set aside.
  • In a food processor, combine the figs, and almond butter.
  • Blend until smooth, scraping down the side of the bowl, as needed, with a rubber spatula.
  • Scoop the fig mixture with your hands or use a 1-teaspoon measure and roll into 1-inch balls.
  • Place the fig balls on the prepared baking sheet.
  • Place the chocolate chips and coconut oil in a medium bowl.
  • Place the bowl over a small saucepan of barely simmering water and stir until the chocolate is melted and smooth, about 2 to 3 minutes.
  • Using a toothpick, dip the fig balls in the melted chocolate to coat evenly, allowing any excess chocolate to drip back into the bowl.
  • Return the fig bites to the baking sheet and sprinkle with salt, if using.
  • Refrigerate for 30 minutes until the chocolate has set.
