A Simple, Savory Breakfast Wrap That’s Packed with Protein!

I am a girl who loves her coffee and a simple breakfast in the AM. If you follow me,  you know I am not a morning person – so I need my breakfast to be as simple as possible, with a good dose of protein to help jumpstart my metabolism.

Balancing your protein, carbs, and fats is crucial for losing fat, gaining muscle, and recovery. I am all about keeping my body fat low and my energy high. This egg and avocado breakfast wrap is perfectly aligned with that goal! With a Flatout wrap in place of a regular tortilla, I can increase my protein while keeping carbs low. Flatout wraps are great to pair with eggs like I do here, or with chicken, veggies, and other ingredients for lunch and dinner options. Of course, you could also use a regular tortilla, flatbread, or another wrap of your choice!

Are Breakfast Wraps Good for You?

This recipe definitely counts as a healthy breakfast. The avocado is full of healthy fats, which are good for your brain and heart, as well as vitamin C, magnesium, vitamin E, and more. 

Eggs deliver good-for-you protein as well as iron, selenium, choline, and other important nutrients. The Flatout wrap adds protein from beans, which is not only good for you, but also tastes great!

What Are Breakfast Wraps Made Of?

So what will you need to make this quick egg and avocado wrap? Just a few simple ingredients that you can keep ready in the fridge, and throw together in the morning.

  • Hard-Boiled Eggs: If you want a foolproof method for making hard-boiled eggs that are easy to peel, try this tutorial on how to boil eggs.
  • Avocado: I use half an avocado for each wrap, sliced. You could also mash or dice the avocado, if you prefer.
  • Bacon: Cooked and diced.
  • Onion: Red onions are my favorite for this, but any kind will do. Dice ‘em up!
  • Fresh Cilantro: Or parsley, or basil, or whatever fresh herbs you like. Mesclun is also a nice option.
  • Sriracha: For those who like a little heat. Not your thing? No problem! Use any sauce or condiment that you like. Creamy mayo, zesty Italian dressing, you name it.
  • A Wrap: I like the Core 12 Flatout wrap.

How to Tell If an Avocado Is Good

If you are wondering how to pick out a good avocado, it can actually be quite easy once you learn a couple of helpful tricks. The first sign that an avocado is ripe, but not too ripe, is the feel of it. A ripe avocado should be pleasantly firm with a touch of softness, like a peach. Avoid avocados that are hard like apples, and avoid avocados that are mushy! You want that happy medium for your breakfast wrap.

The second thing to look for is the color of the inside of your avocado. It should be bright green, obviously, but you can’t exactly stand there and peel the avocado to check! Instead, if you find an avocado that is soft but not mushy, pop the stem off and take a peek at the inside. If it looks nice and green, you’ve got a keeper. If it’s brown, gray, or black, the avocado is past its prime.

Let’s Make an Egg and Avocado Breakfast Wrap!

This recipe might just be the easiest one you’ll ever make – all you do is throw your ingredients together in a wrap, and you’re good to go! Here’s how to do it:

  • Add the Egg to the Wrap. Lay the wrap out on a plate, and arrange your slices of hard-boiled egg on the wrap. 
  • Add the Toppings. Next, add your avocado slices, bacon, red onion, cilantro, and Sriracha sauce. Add as much or as little as you like.
  • Wrap It Up. Wrap up the sides, and then roll up the wrap, tucking the end underneath.
  • Enjoy!

Tips and Variations

You can also make this recipe your own in so many different ways – it’s basically like making a breakfast sandwich, but better! Need more ideas? Check these out:

  • Vegan Wrap: Feel free to use your favorite vegan protein instead of the egg. Some good ideas include Chickpeas in Sofrito, a tofu scramble, or your favorite veggie burger patty.
  • Salad Wrap: Instead of eggs, you could use egg salad, tuna salad, ham salad, etc. Yum!
  • Veggie-Packed Wrap: Throw veggies into your egg wrap, like lettuce, tomato, blanched and cooled green beans, corn kernels, or anything that you like.
  • Dressing Options: Change the flavor of the wrap entirely by drizzling your favorite salad dressing over the ingredients inside. Anything from salsa to gochujang is welcome here.

Storing and Reheating

For best results, store the ingredients separately in your fridge. Unpeeled hard-boiled eggs generally last for about a week, and so do chopped onions and cooked bacon. Peeled avocado usually only keeps for about 24 hours.

Can I Freeze This Breakfast Wrap?

Freezer meals are great – see my Great to Freeze recipes for some freezer-friendly inspiration – but I don’t recommend freezing this particular recipe. Frozen eggs can be watery and have a bad texture when thawed. This recipe is best enjoyed fresh.

Ingredients

  • 1 Core 12: Flatout wrap
  • 1 hard boiled egg sliced {how to boil eggs here}
  • 1/2 avocado sliced
  • 2 slices bacon cooked and diced
  • 2 tablespoons red onion diced
  • 1 teaspoon cilantro chopped
  • 1/4 teaspoon Sriracha sauce or to taste

Instructions

  • Place hard boiled egg in center of wrap.
  • Top with avocado, bacon, red onion, cilantro and Sriracha sauce.
  • Wrap up sides and then roll up tucking end under.

    I’m not usually a big wrap fan, because I feel like the wrap itself usually adds a lot of calories without much benefit in return, but that is totally not the case here. Thanks for the Flatout intro, and I love the filling you have happening here too!

    1. I agree Erin, I usually open the wrap and eat what is inside with a fork, but this wrap truly is light an delicious. I love the addition of protein.
