Fava Beans & Manchego Crostini

I had this dish at a local Latin Restaurant here in town and loved it, so as I am apt to do I went home and started trying out the recipe at home and came up with this little doozy.  I love the Manchego cheese, which is salty with the nutty flavor of the Beans.  The mix of herbs just adds another layer of flavor.  Recently a blog that I follow the Pyjama Gardner posted about her growing Magic Beans and how she is not a fan of eating the Fava Beans, it made me think of this recipe and how delicious it is, even someone who is not a fan of these little nutty Beans would learn to love them in this recipe!
  • 2 cups Fava Beans (thawed)
  • 1/2 cup cubed Manchego Cheese
  • 2 cloves of garlic, sliced
  • Zest of One Lemon
  • 1/2 cup Olive Oil
  • 1/2 teaspoon chopped Rosemary
  • 1/2 teaspoon chopped Oregano
  • 1/2 teaspoon chopped Thyme
  • Salt & Pepper

Combine all ingredients in a medium bowl and let sit at room temperature for about an hour or longer.

Serve on sliced bread, or crackers.
