Gluten Free Peanut Butter Brownie Recipe

These decadent peanut butter brownies definitely have that wow factor, which is why you won’t believe how quick and easy they are! They’re soft, dense and chocolatey with the perfect amount of peanut butter in the smooth ganache topping as well as the brownies themselves. Don’t be intimidated by how beautiful they look – replicating the swirl design on top is pretty much effortless.

In addition to being quick, easy and downright irresistible, these brownies are surprisingly guilt-free. They contain tons of protein, zero gluten, and much less sugar than your average brownies do. I’m a sucker for any dessert that combines chocolate and peanut butter, but this one satisfies my cravings like none other! Be prepared to start making these brownies all the time.

What You’ll Need

Another thing I love about this recipe is its minimal use of ingredients. Scroll down to the recipe card below this post for the associated amounts.

For the Brownies

  • Creamy Peanut Butter
  • Whole Earth Sweetener Baking Blend: This foolproof baking blend combines raw sugar and stevia. If you were to stick with regular granulated sugar, you’d have to use twice as much. I highly recommend trying out this baking blend if you’re looking to cut calories – you won’t even be able to taste the difference!
  • Bittersweet Dark Chocolate Chips
  • Eggs: You’ll need one full egg and an extra yolk, brought to room temperature.
  • Vanilla Extract
  • Chocolate Protein Powder
  • Salt: Don’t omit this important flavor enhancer.

For the Topping

  • Bittersweet Chocolate Chips
  • Coconut Oil: Feel free to use grass-fed butter if you’re not dairy-free or vegan.
  • Creamy Peanut Butter

How to Make Flourless Chocolate Peanut Butter Brownies

All of your wildest chocolate peanut butter dreams are about to come true. Just follow these simple instructions!

Make the Brownies

  1. Heat Oven & Prep Pan: Preheat the oven to 350°F. Line an 8×8 or 9×9-inch square pan with parchment paper and set it aside.
  2. Melt Chocolate: Add the chocolate chips to a large heat-proof bowl and microwave them on high for 1 minute. Remove the bowl from the microwave and stir the chips around, then nuke them for an additional 1 minute. Stir the melted chocolate until any remaining clumps smooth out.
  3. Combine Peanut Butter & Baking Blend: Stir together the peanut butter and baking blend until the mixture is smooth.
  4. Add Chocolate & Protein Powder: Add the melted chocolate and protein powder to the peanut butter mixture, stirring until everything is blended.
  5. Add Remaining Ingredients: Add in the vanilla extract, salt and eggs, stirring until completely blended.
  6. Transfer Batter to Pan: Pour the batter into the prepared pan and smooth it out with an offset spatula.
  7. Bake: Bake the brownies for 22-25 minutes, or until they’re set in the center, taking care not to over-bake them.
  8. Let Cool: Remove your brownies from the oven and set them aside to cool.

Add the Topping

  1. Melt Chocolate & Coconut Oil: Add the chocolate chips and coconut oil to a medium-sized glass bowl. Microwave the mixture for 1 minute, stir it well, then microwave it for an additional minute. Remove the bowl from the microwave and stir until the mixture is completely smooth.
  2. Pour Over Brownies: Pour the warm ganache over the cooled brownies. Use an offset spatula or the back of a spoon to smooth it out and spread it to the edges of the pan.
  3. Add Peanut Butter: Arrange the peanut butter in pea-sized drops all over the warm ganache.
  4. Create Swirl Effect: Use a toothpick to spread the dots of peanut butter through the chocolate as it melts.
  5. Let Set: Place the brownies into the freezer and allow them to chill for 15 minutes, or until the ganache hardens. Alternatively, you can chill them in the refrigerator for about 2 hours.
  6. Enjoy! Cut the brownies into squares and serve.

Tips for Success

These detailed tips and tricks will help you make a flawless batch of peanut butter brownies.

  • Room Temperature Eggs are Key: Don’t forget to bring the eggs to room temperature before you start on your batter. If they’re cold when you add in the full egg and yolk, they’ll be harder to combine with the other ingredients.
  • Use a Double Boiler: Melting chocolate in the microwave is a pain compared to the ease of using a double boiler. If you have one, go ahead and melt the chocolate that way instead.
  • Add the Ganache While it’s Warm: In order for the pea-sized drops of peanut butter to seamlessly swirl into the chocolate, the ganache has to be warm when you pour it over the brownies. As soon as all of the chips are melted, add it to the pan.
  • Let the Brownies Set Before You Cut Them: Make sure your brownies have fully cooled and set before you cut them into squares. Otherwise, you won’t get neat-looking servings.

Serving Suggestions

These brownies are incredible all by themselves, but if you’d like to spice them up with a little extra something, there are a couple of different routes you can take. Try sprinkling chopped peanuts over the topping before it sets or scooping some vanilla ice cream onto each brownie before you serve it. If preferred, you can use crushed Reese’s peanut butter cups instead of chopped peanuts and a dollop of whipped cream in place of the ice cream.

Storage Instructions

Extra brownies should be kept in an airtight container in the fridge. Enjoy them within 1 week of making them. If you’d like, you can bring the brownies to room temperature before you serve them.

Can Flourless Brownies Be Frozen?

Yes! Place the brownies onto a lined baking sheet and freeze them until the topping is frozen solid. Transfer the frozen brownies to a freezer-safe container and store them for up to 3 months. Thaw them out in the fridge before you enjoy them.

  1. Can u tell me the substitute for Whole Earth Sweetener Baking Blend since I could not find it in the supermarket

  2. These sound so yummy & look wonderful too. I am wondering if I can’t get the Whole Food sweetener can I sub in raw sugar & stevia that I have? If so what ratio would I use of each. I have pure Stevia. Or os there a way to make them with less sugar & no stevia?
Thanks for your help & for all your delicious recipes.
