Grilled Eggplant with Mozzarella

 When you serve it to them don’t tell them it was this easy!  It will be our little secret!! :)
  • 1 Eggplant, thinly sliced lengthwise
  • 1 Fresh Campana Mozzarella Ball
  • 1 cup of Marinara Sauce
  • Basil Leaves
  • Salt & Pepper
  • Olive oil

Preheat Grill to medium-high heat.

Place Eggplant slices on plate lined with paper towel and sprinkle with salt and pepper.

Brush slices with olive oil and place on grill, cook until grill marks form, 4-5 minutes.  Flip and cook on other side until you see the grill marks form.  Remove from grill.
On a platter place eggplant slices top with a spoonful of marinara, tear the mozzarella into bite size pieces and snuggle it into the marinara, drizzle with olive oil and a few torn pieces of basil.
