Perfect Barbecue Chicken

When I use the grill, which sits about 10′ from my kitchen door, I have two escorts.  They each have four feet and wet noses and they think that when I open the door to head to the grill with a plate of meat it is their personal job to run over my feet almost trip me and get to the grill before me and before each other.

Now you might think it is because they are dogs and I have the plate of meat, which may be part of it, but really it is about the chipmunk that lives in my grill.  Yep, the little sucker decided to make a home in my grill over the winter months.  I don’t blame him it was covered with that warm cover that was lined with that perfectly fuzzy stuff that makes the perfect nest for Mr. chipmunk and his brood.

Of course, as soon as we discovered that the local chipmunk family had moved in we cleaned out or grill, removed all their wonderful debris, threw away our ruined cover, bought a new one  and basically huffed puffed and blew down their house.  Not that this caused them to leave, they keep trying to come back and move in even though the eviction notice is still up.

Back to those dogs I live with, they are tormented by this chipmunk, they are convinced he is in there at all times even when he is NOT.  To my utter horror a few days ago, they were so convinced he was hiding in my grill they used their teeth to shred off my brand new grill cover to save me from my chipmunk squatter.  Yep, another ruined grill cover.  Ahh, a life with animals.  Perfect Barbecue Chicken that is moist and delicious everytime | ahealthylifeforme.com

 Even though I have grill cover troubles, my grill is working fine and I have been firing it up on a regular basis.  One of my favorite things to grill out is my barbecue chicken.  My technique in cooking barbecue chicken {as well as ribs} is to slowly cook it over low heat raised on a rack above a bit of water.   Cooking it with such a low temperature allows the meat to retain its own moisture and the water in the lower pan heats and  evaporates up and around the meat helping to keep it moist.  The chicken is just cooked when you remove it from the oven.  The act of grilling is strictly for flavor.  It gives your chicken that wonderful grill flavor and it carmelize’s the barbecue sauce to infuse it onto your chicken.

 If you are paleo or avoiding sugar coat your chicken with Franks Hot sauce, which will also give you a spicy kick.

Perfect Barbecue Chicken

Ingredients

  • 3 pounds Boneless skinless Chicken Breasts
  • Generous pinch of Kosher salt
  • 1/4 teaspoon Ground black pepper
  • Favorite Barbecue Sauce about 1 cup
  • Franks Hot Sauce {for you spicy folks and paleo folks} about 1 cup
  • water

Instructions

Step 1:

  • Preheat oven 225° F.
  • Line a rimmed baking sheet or broiler pan with foil for easy clean up.
  • Spray a broiler pan rack or cooking rack with non stick organic spray.
  • Fill bottom pan with 1 cup of water.
  • Place rack pan over pan.
  • Line up chicken breasts on rack pan and sprinkle with salt & pepper.
  • Place in oven for 1 hour for tenders 1 1/2 hours for large chicken breasts.

Step 2:

  • Heat grill to medium high heat.
  • Coat chicken breasts on both sides with barbecue sauce or franks hot sauce. You can brush on or dip chicken into sauce.
  • Place chicken on grill and cook for 4-5 minutes and flip. Cook the other side for an additional 4-5 minutes.
  • Remove and Enjoy,

Notes

If using chicken with skin and bones, cook for up to 2 hours in oven. Or until temperature is 165°.
This technique works the same with ribs, cook for 2 hours at 225° F.

    Gorgeous barbecue chicken! Can’t believe the audacity of those chipmunks! We have some that have dug a big hole in our strawberry bed. Well actually, two. My nine year old Charlie flooded out the first hole with a garden hose. That resulted in a new hole. They certainly are resourceful and persistent little furry creatures….

  3. I find that if I cook pork ribs (seasoned) in some lemon lime soda in the crockpot then bbq them with whatever you want on them they turn out great (same idea)…
