I just got back from my trip out to California and I had a great time. Â Such great memories with my hubby and friends. Â We ran all over San Francisco, ate great food and then spent the remainder of the week on a bike tour riding through sonoma, visiting vineyards. Â So much fun! Â BUT, I am glad to be home.
I want the comforts of home, including the food I eat.
I love eating out when we travel, trying new things, but it can become too much, and all IÂ want is some simple wholesome food.
 This soup is just the thing to welcome you back home and warming you up.  The perfect feel good food.
I made simple swiss cheese sandwiches to serve along side each bowl of soup. Â As simple as two slices of hearty gluten free bread buttered on each side and filled with a few slices of good quality sliced swiss cheese, cooked golden brown in a skillet or panini press.

- [br][b]Soup:[/b]
- ½ cup diced yellow onion
- ¼ cup dry gluten-free long-grain rice
- ¼ cup diced carrot
- 1 tablespoon garlic, minced {about 1 large clove}
- 1 teaspoon dried Italian seasoning
- 2 tablespoons coconut oil
- ¼ cup dry white wine
- 2 cups low sodium chicken broth
- 1-28 oz. can whole tomatoes
- 1 teaspoon honey
- 2 tablespoons unsalted butter
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- [br][b]Topping:[/b]
- Grated Parmesan {optional}
- Fresh basil leaves {optional}
- In a medium saucepan over medium-high heat melt coconut oil and sauté onion, rice, carrots, garlic and dried Italian seasoning until onion starts to soften, about 4-5 minutes.
- Add wine to pan and scrape any brown bits that are stuck to the bottom.
- Add in chicken broth, tomatoes, honey and butter, season with salt and pepper and bring to boil.
- Once at boil reduce heat to low and simmer covered for about 20 minutes.
- Let cool slightly and blend soup, either with and handheld blender or standard blender. If using standard blender be careful hot liquid expands so use a towel under your hand to hold down top of blender.
- Serve and top with grated Parmesan and fresh basil leaves.
