Chocolate Peppermint Truffle Bars

Ingredients

  • 1/4 cup Nutiva Superfood Shortening
  • 1/3 cup Coconut Oil
  • 4 tablespoon organic honey
  • 1/8 teaspoon . Sea salt
  • 3/4 cup dutch cocoa powder
  • 1/2 teaspoon peppermint extract
  • Extra cacao powder for dusting

Instructions

  1. Line a loaf pan with parchment paper.
  2. In a medium heatproof bowl add Superfood shortening, coconut oil, honey and salt.
  3. Pop in microwave and cook for 1 minute, remove and stir. If not completely melted and blended cook an additional 30 seconds.
  4. Once melted and blended slowly add cocoa powder and peppermint extract and stir to blend.
  5. Pour completely blended mix into prepared pan and set in freezer until set. 1-2 hours.
  6. Remove from freezer and pull out by edges of parchment paper. Cut into 1" squares then dust top with more cocoa powder.
  7. Place in paper baking cups and set on a tray to serve.
  8. Store in refrigerator.
