We had such a beautiful weekend here in Cincinnati.  The weather was perfect for being outside and I tried to spend as much time in the great outdoors as I could.

I went downtown with a friend and we ate lunch at a cute bistro and then spent time doing some window shopping and walking through Washington Park which is in the heart of downtown. Then on Saturday me and a few friends ran the University of Cincinnati stadium stairs which was a great way to jump-start the weekend.  Let me tell you my legs are SORE! On Sunday I went first thing in the morning to pick up my new package of bees. Yes, bees come in packages.  Now is the perfect time to start new beehives, with all that perfect warm weather we have been having.

Then I spent the rest of the morning setting up my bees in their new home. Which entails me gently removing the queen and then dumping all 3 pounds of bees into the hive box.  Not very gentle a move, but it works.

With the warm spring weather the vegetables have been looking great.  Especially the asparagus.  I picked up some great veggies at the market and came home planning on making vegetable steak wraps.  I envisioned thinly pounded steak wrapped around vegetables and then seared to perfection.

And… clearly, that didn’t happen because this is a Paleo Asian Stir Fry recipe, not a Paleo Vegetable Steak Wrap recipe.  Maybe I will work on that recipe this week.

As I started pounding out the meat and prepping the vegetables I changed my recipe game plan.  I decided I didn’t want to go outside to the grill because it had started to sprinkle and instead wanted to make dinner in a cast iron skillet on the stove and voila… Paleo Asian Stir Fry was born.

Not bad, huh?

Let me just say this dish is…. AWESOME and it is so damn easy to make.  Perfect for when you are crazy busy and have limited time to put dinner on the table.

I ate this as is, but for the guys I boiled up some Soba buckwheat noodles, which take minutes and served the stir fry in a bowl.  The guys LOVED this dish and definitely wanted seconds.

Paleo Asian Stir Fry with peppers and mushrooms.

Asian Stir Fry

This Paleo Asian Stir Fry is packed with the perfect amount of sweet and salty with crunchy fresh vegetables and seasoned beef. It is ready in 20 minutes and is a protein-packed, gluten free, dairy free dinner that the whole family will love.

Ingredients


Marinade:

  • 1/2 cup coconut amino
  • 1/4 cup honey
  • 3 cloves garlic minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon sesame oil


Stir Fry:

  • 1 tablespoon coconut oil
  • 2 cloves garlic minced
  • 8 ounces asparagus trimmed and cut into 1” pieces
  • 1 red bell pepper trimmed, seeded and cut into thin strips
  • 5 ounces baby Bella mushrooms sliced
  • 1 1/2 pounds flank steak pounded and then thin-sliced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper


Topping:

  • 1 teaspoon sesame seeds
  • 9 ounces Soba noodles {optional}

Instructions

Marinade:

  • In a small bowl whisk together coconut amino, honey, garlic, ginger, and sesame oil.

Stir Fry:

  • Place steak in between two pieces of wax paper and place on cutting board. Using a mallet or a heavy skillet proud out to 1/2”- 1/4”. My steak was pretty thick so I only got it to 1/2” thick, don’t worry about the thickness too much, just make sure you pound it thoroughly. {This helps with breaking down the tough fats throughout the meat.}
  • Slice meat into slivers about 1/2” thick and 2” long.
  • Sprinkle meat all over with salt and pepper. Set aside.
  • Place a heavy skillet over medium-high heat, add coconut oil, when melted toss in asparagus, peppers, and mushrooms. Stirring to cook evenly. I cooked mine 5 minutes, You want your vegetables still crisp, not soft and mushy.
  • Using a spoon remove your vegetables from the skillet and set aside on a plate.
  • Place your meat and 1/2 of your marinade into the skillet. The marinade with boil up, just stir so that it does not burn. Flipping your steak so that it cooks on both sides. About 3 minutes per side.
  • Toss vegetables back in the pan with beef and marinade and coat evenly with the sauce. Taste and add more marinade if you like.
  • Top with sesame seeds and serve alongside remaining soy sauce mixture.
  • If you are not paleo, cook up some gluten free soba noodles and serve stir-fry over cooked noodles
