Gluten Free Oatmeal Ginger Chocolate Chip Cookies

I ran to Loews to buy cow manure on Sunday….. yea, I bet you weren’t expecting that.

It is time for me to get my garden ready for winter, what that means is pulling weeds, pulling weeds, pulling weeds and oh yea adding important nutrients to my soil, like cow manure.  Why am sharing this with you?

Really to ask your opinion about Christmas.  It is a few days before Halloween, and when I went into the garden center at Loews they had filled the entire space with Christmas trees, inflatable snowmen and christmas lights of every size, shape and color.

REALLY?  Christmas in October, that is so, so wrong.  Don’t you agree?

Doesn’t it bother you that you can’t just enjoy one holiday before you have to start thinking about your Christmas tree, and do you have enough lights to decorate it, or did you throw away your lights last year?  Well, that is what I thought when I walked past all those Christmas trees.

Then I got mad at myself for even thinking about buying Christmas lights when I was there to buy cow manure.{that sounds so funny doesn’t it? :)}

So, no Loews, and whoever else has their Christmas crap up to try and entice me, I am not buying Christmas stuff when I should be thinking about what Halloween costume I am wearing next week.

WHY YOU WANT TO MAKE THESE GLUTEN FREE OATMEAL GINGER CHOCOLATE CHIP COOKIES.

If you are a ginger fan, this cookie will become your mostest favorite EVER!  Yes, I know mostest is not a real word, but it seems to fit in that sentence.

If you are a sorta kind of fan of ginger, than only put in 1/4 cup of chopped candied ginger.

You can form this dough in to balls set on parchment lined baking sheet, placed into the freezer, once frozen place balls in a ziploc bag to be baked later. Bake straight from the freezer adding 2-3 minutes to bake time.

Gluten Free Oatmeal Ginger Chocolate Chip Cookies

Ingredients

  • 1/2 cup 1 stick unsalted butter, softened to room temperature
  • 2/3 cup lightly packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3/4 cup gluten free all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fresh grated nutmeg
  • 1 1/2 cups gluten-free old-fashioned oats
  • 1/2 cup bittersweet chocolate chips {I used 60% cacao}
  • 1/2 cup coarsely chopped candied ginger

Instructions

  • Preheat oven to 350°. Line a baking sheet with parchment paper or split.
  • In a bowl of an electric mixer cream together butter and brown sugar.
  • Once creamed together add egg, and vanilla extract and beat until incorporated.
  • In a small bowl whisk together flour, baking soda, salt, cinnamon, nutmeg.
  • With the electric mixer on low, slowly pour the flour mix into the butter mixture. Blend until combined.
  • Add flour, chocolate chips, and ginger and only run mixer until just blended for just a few turns. If needed continue blending by hands.
  • Scoop dough into 2” balls and place on baking sheet, spacing 2” apart. Bake in the center of the oven for 12-15 minutes until golden brown.
  • Place on wire rack to cool. Continue with the second batch until all dough is cooked.
  • Store in airtight container for 3-4 days.

    Yep – totally with you on the Christmas-before-Halloween thing! One holiday at a time, pleeeeease!!!! (And I don’t think I’ve ever purchased cow manure, but I’m pretty sure there’s no wrong time for that lol!) Anyway … these cookies! Brilliant! Such a great idea to add the ginger … two wonderful things become even wonderful-er (like mostest … definitely a useful word 🙂 ) when you add a third wonderful thing like ginger!

    Hi Amy,
    I totally agree that they rush each of the seasons even summer. When the weather gets warm enough to what summer clothing the best is picked over as they start to sell it In early April. Christmas used to start in stores & on the ratio etc. in December( when I was young!) & has gradually gotten earlier & earlier. I wish we could go back to the simpler times in this respect. Children could get really excited for a couple of weeks & then it would be over & we would be starting a new year. Now I am wondering if by the time it gets here they are blasé about it except maybe for the gifts they may receive. I think we also have lost or changed the reason for Christmas. It has become very commercialized.
    Enough of my ranting! Enjoy your posts & recipes.

    Am I blind? Where is the button to print just the recipe and nutritional info. On another note I tried your blueberry muffins and THEY ARE TO DIE FOR. I have made them several times already. I’m struggling with my weight and I am not a breakfast person. However I do like something sweet (like the muffins) to go with my coffee. I’m in search of a health low cal cinnamon bun (dream on).
