I am happy to say that I am in Miami this week, woot-woot.
Well, I needed a break from the extremely cold temps in Cincinnati and all that snow. I plan on soaking up the sunshine, enjoying some time on the beach with family and going to some amazing restaurants.
We have been running every morning since we arrived and let me say, ouch.
It is pretty incredible how not running any real distance for six months has made me soft. I have blisters and sore legs. Just proves that I need to do more crosstraining, and not just depend on my CrossFit to take care of everything.

Back to this AMAZING recipe….before we headed out of town, I worked on a ton of recipes. One that I made several times and just Loved was this Paleo Salmon Teriyaki dish.
This recipe takes 20 minutes.
I can’t tell you how easy this recipe is to prepare, and it is done from start to finish in 20 minutes.
You heard me right, 20 minutes. Look at it, it is gorgeous and ridiculously delicious. The homemade teriyaki sauce is simple to make and WAY better than anything you can buy at the store. When preparing your sauce, make sure to watch the time on the boil. I did not the first time and my sauce thickened up fine, smelled fine, but had burnt after taste. The second and third time around I paid a wee bit more attention and the sauce was perfect.

Salmon Teriyaki
Equipment
- Medium Saucepan
- Bowl
- Cutting Board
- Knife
- Baking Sheet
- Baking Foil
Ingredients
- Glaze:
- 1/4 cup coconut amino
- 1/4 cup juice from fresh orange
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 large garlic clove minced
- 2 teaspoons grated fresh ginger
- 2 teaspoons sesame oil
- Pinch of red pepper flakes
- 1 teaspoon arrowroot flour or tapioca flour
- Salmon and Toppings:
- 1 1/2 pound salmon skin removed
- 2 carrots peeled and cut into matchsticks
- 1/2 English cucumber peeled and cut into matchsticks
- 1 red bell pepper trimmed and cut into matchsticks
- kosher salt
- garnish:
- 1 sliced green onion chopped
- 1 generous tablespoon cilantro chopped
- 1/2 teaspoon sesame seeds more if desired
Instructions
- Preheat oven to broiler and position top oven rack about 6 inches from the heat.
- Combine all of the glaze ingredients {except arrowroot} in a saucepan over medium heat and bring to a boil, stirring for 2-3 minutes.
- Remove saucepan from heat, and whisk in arrowroot.
- Place back on heat and stir until it thickens 2-3 minutes.
- In a medium bowl, combine carrots, cucumber, and bell pepper, season with a small pinch of kosher salt, then toss veggies in about 1 tablespoon of the glaze mixture. Set aside.
- Grease foil-lined baking sheet with coconut oil, and place salmon on foil. Drizzle salmon with olive oil, then broil for 2 minutes.
- Remove from oven and brush or drizzle glaze over salmon, covering the top. Return to oven for 2-3 minutes or until top is golden and salmon is cooked through to your liking.
- Top salmon with veggies, cut salmon to desired serving size then garnish with scallions, cilantro, and sesame seeds.
- Pass any reserved glaze at the table for drizzling.

This recipe came together so fast. It was quick, easy and delicious. I think the salmon may taste as good the next day cold after a work-out. Teriyaki is my favorite and this glaze is so healthy when compared to store bought! Thanks Amy.
