I am a girl who loves her toast. I know, I know such a boring food choice to love, but I do.
It was definitely my breakfast of champion when I was in high school and college. Mostly because I was lazy in high school and broke in college.

Strawberry Mascarpone Mint Toast
Ingredients
- 1 slice of Pepperidge Farm® Harvest Blends bread toasted
- 1 tablespoon mascarpone cheese
- 2 strawberries sliced
- 1 mint leaf chopped
- pinch of lemon zest from organic lemon
- 1 drizzle of honey
Instructions
- Spread the mascarpone in a thin layer on toast.
- Place strawberry slices in a single layer, overlapping slightly.
- Garnish with the freshly chopped mint, a drizzle of honey and the lemon zest.
- Serve and enjoy!
