Easy Salmon Soup

This Easy Salmon Soup is made with fresh salmon, fennel, leeks, and shitake mushrooms. It’s unbelievably good, and good for your your body!

Simple Ingredients

You'll only need a few ingredients to make this easy recipe, so let's round them up and get started!

Sauté the Veggies

Add veggies, salt, and pepper to a soup pot and cook for a few minutes until softened.

Add the Liquid

Bring vegetable broth and water to a low boil/simmer, then reduce heat to low.

Add the Mushrooms

Stir the mushrooms in and let them cook for 10 – 12 minutes, stirring occasionally. 

Finish the Soup

Add salmon and spinach to the pot and stir to wilt the spinach. Then cover and let sit for five minutes.

Serve

Serve the soup in bowls with a sprinkle of Parmesan cheese. Enjoy!
