Grease a muffin tray, then evenly distribute bell peppers among the bottoms of each muffin cavity.
Whisk cottage cheese, egg whites, Monterey Jack cheese, salt, pepper, Italian seasoning, and cayenne pepper in a large bowl.
Pour the egg mixture into the cavities until they’re 3/4 full. Sprinkle the remaining cheese on top.
Bake for 30 minutes, then remove the tray from oven and allow the egg bites to cool for 10 minutes in the muffin pan.
