There's so much goodness in each handful of this trail mix. Chocolate chips, dried cherries... you name it!
After you toast the coconut, season the nuts and seeds with a mix of coconut oil, cinnamon, salt, and vanilla.
Roast the nuts for 6-8 minutes, stirring them halfway through. Once cooled, add the rest of the ingredients.
