Homemade Fig Newtons are a healthy yet addictive snack! These cookie bars may be made with minimal sugar, but you won't be able to get enough of them!
Make sure you check out the ingredient list for the filling and for the cookies themselves!
Bring the filling ingredients to a boil, stirring occasionally. Reduce heat and simmer for 40-50 minutes, stirring often. Then, let cool.
Mix the dry ingredients together and form the dough. Next, roll it out and freeze one section for the top crust, and bake the other for the base.
Spread the filling over the baked layer of cookie dough, and add the remaining layer that was frozen on top.
Bake your fig newtons once more for 20-25 minutes. Let them cool, and then slice and enjoy!
