Season both sides of the chicken breasts with salt and pepper and set them aside.
In a shallow bowl, mix breadcrumbs, parmesan, and parsley, stir to combine, and set aside.
Whisk the egg with water and set that aside, too.
Bread the chicken, one piece at a time, by dipping it first in the egg (allow the excess to drip off) and then in the breadcrumb mix.
Heat a heavy skillet over medium-high heat, add coconut oil, and cook chicken pieces until golden-brown, 4-5 minutes per side.
Place the seared chicken on the broiler pan, and bake in the preheated oven for about 28 – 30 minutes, or until done.
Place the chicken on a serving plate, and top with warmed marinara and a sprinkle of grated Parmesan.
