Mix Dry Ingredients

Mix together granulated sugar, confectioner's sugar, flour, and salt in a bowl.

Mix the Almond Paste

Put the almond paste in a bowl and mix it a little, then add egg whites and mix on low until smooth.

Add Almond Extract

Then mix in the almond extract and the flour mixture, just until smoothly combined.

Shape the Dough

Scoop dough and push into the dish of pine nuts, so that the pine nuts stick.

Add to Baking Sheet

Place spoonfuls pine-nut-side-up on a baking sheet, and stick any fallen pine nuts back onto the cookies.

Bake

Cool
