Cook the Potatoes

Boil the potatoes for 5 minutes, then drain and reserve 1/2 cup of the water.

Roast the Vegetables

Roast the veggies with olive oil, Italian herbs, salt, and pepper for 30 minutes, stirring and tossing halfway.

Make the Marinade

Combine vinegar, garlic, Italian herbs, olive oil, Dijon mustard, and plenty of black pepper.

Marinate the Steak

Rub some of this over the steak, place it in a shallow dish, and set it aside.

Cook the Steak

Heat a pan over medium-high heat and pan-sear the steak for 2-3 minutes on each side.

Make the Gravy

Allow the steak to rest. Meanwhile, mix the vinegar with the bouillon and the reserved potato water.

Simmer

Pour the gravy mixture into the pan, and simmer until thickened slightly.
