Stuffed Chicken Breast

This easy recipe packs so much flavor in every bite!  With goat cheese, basil and white wine mushroom sauce, it's fancy but easy to make.

What Are Stuffed Chicken Breasts?

Simple Ingredients

You'll only need a few ingredients to make this easy recipe, so let's round them up and get started!

Make the Filling

Mix together the cheese, onion, basil, breadcrumbs, egg, salt and pepper.

Flatten the Chicken

Flatten chicken breasts between wax paper or parchment sheets, pounding until ¼ inch thick.

Stuff the Chicken

Place a large spoonful of filling on each breast, in a line towards the top.

Roll Up the Chicken

Roll them up and secure with kitchen twine or toothpicks.

Bread the Chicken

Coat the stuffed chicken in egg first, and then in breadcrumbs, and place on the baking sheet.

Bake!

Top each breast with a slice of butter, and bake. Then take it out of the oven and let cool for 5 minutes.

Make the Sauce

Cook the mushrooms in a sauté pan with butter for about 7 minutes.

Add the Wine

Add wine, cook for 2–3 minutes, and pour in the stock. Let simmer for 7 minutes, then remove from heat.

Finish the Sauce

Whisk in the rest of the butter a tablespoon at a time to make a smooth, creamy sauce.

Enjoy!

Cut the string from each chicken breast. Slice to reveal the filling, and serve with mushroom sauce.
