Mix together the cheese, onion, basil, breadcrumbs, egg, salt and pepper.
Flatten chicken breasts between wax paper or parchment sheets, pounding until ¼ inch thick.
Place a large spoonful of filling on each breast, in a line towards the top.
Roll them up and secure with kitchen twine or toothpicks.
Coat the stuffed chicken in egg first, and then in breadcrumbs, and place on the baking sheet.
Top each breast with a slice of butter, and bake. Then take it out of the oven and let cool for 5 minutes.
Cook the mushrooms in a sauté pan with butter for about 7 minutes.
Add wine, cook for 2–3 minutes, and pour in the stock. Let simmer for 7 minutes, then remove from heat.
Whisk in the rest of the butter a tablespoon at a time to make a smooth, creamy sauce.
Cut the string from each chicken breast. Slice to reveal the filling, and serve with mushroom sauce.
