Gluten Free Blood Orange Cake

Gluten Free Blood Orange Cake is a sweet, tart and dense cake.  A delicious way to enjoy the seasonal Blood Orange.

Equipment

  • 9" Baking Pan

Ingredients

Blood orange puree:

  • medium blood oranges washed well and sliced into rounds
  • cups  water

Cake

  • cups  blood orange puree
  • 1/2  cup  butter melted
  • egg lightly beaten
  • 1 1/2  cups  gluten free flour
  • cup  coconut sugar
  • tbsp  baking powder
  • 1/2  tsp  salt

Glaze

  • juice of 1 blood orange about 1/4 cup
  • 1 cup confectioners' sugar

Instructions

Blood Orange Puree:

  • In a medium saucepan bring sliced blood oranges and water to a boil.
  • Cover set heat to low and simmer for 20 minutes.
  • Transfer to blender and blend until completely smooth. Measure out two cups of the pulp.

Cake:

  • Preheat oven to 350ºF. Grease and flour a 9" round baking pan and line the bottom with a circle of parchment paper. Set aside.
  • In a large bowl, combine two cups of the blood orange puree with the melted butter and egg.
  • In a separate bowl, whisk together the flour, sugar, baking powder and salt.  Pour the orange mixture into the flour mixture and gently fold together with a rubber spatula until just combined.
  • Bake in centre of oven for about 40 minutes, or until cake is golden brown and set in the center. Use. Cake tester if unsure.
  • Let cool a few minutes in pan, then invert onto a cooling rack to cool completely.

Glaze:

  • Whisk together juice and confectioners' sugar.
  • Set cake on serving plate and gently pour glaze over cake once it's completely cool.
  • Top with sliced oranges for appearances.

Keep covered and in the refrigerator for up to 3 days.
