- 1 small sweet potato
- 1 tbsp extra virgin olive oil + more for drizzling
- 1/4 tsp black pepper
- 1 radish
- 1 ounce goat cheese crumbled
- 1 small bunch of microgreens about 1 ounce
- lemon zest
Preheat oven to 425°
Wash sweet potato, prick with fork and place on small baking sheet
Drizzle potato with olive oil and rub to cover the entire potato
Bake potato for 40 minutes or until potato is easily pierced with fork.
Remove from oven and let sit until cool to touch.
Cut potato in half and sprinkle with pepper.
Top with sliced radish, crumbled goat cheese and microgreens.
Add lemon zest and drizzle of olive oil.
