Ingredients

For the Soup

  • 3 tbsp olive oil
  • 1 medium yellow onion diced small
  • 3 garlic cloves minced
  • 1 can white beans drained and rinsed
  • 3 tsp organic vegetable base
  • 3 cups water
  • 1 lb broccoli florets
  • 2 cups baby spinach
  • 1 tsp dried Italian seasoning
  • 1/8 tsp red pepper flakes
  • 1/4 tsp fine sea salt
  • 1/2 tsp black pepper

For the Toppings (optional)

  • red pepper flakes
  • olive oil drizzled on top
  • fresh chopped parsley
  • grated parmesan cheese
  • sliced jalapeno

Notes

Notes: If you are using a blender to blend, the soup will be hot, be careful and let the soup cool a bit, and work in small batches if needed.
If you want this to be dairy free, do not add Parmesan Cheese.
