Gluten Free Yellow Banana Cake

Gluten Free Yellow Banana Cake is a little bit of sweet heaven. The moist gluten-free yellow cake with fresh banana flavor topped with a classic white frosting makes the perfect dessert cake or decadent breakfast cake.

Ingredients

  • 1 box yellow cake mix
  • 2 ripe bananas mashed
  • 3 eggs room temperature
  • 1/2 cup unsalted butter softened
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup of classic white frosting mix {I used Pillsbury premade}

Instructions

  • Preheat oven to 350°
  • Grease and flour or spray with baking spray a 9" loaf pan, set aside
  • In a large mixing bowl or electric mixer, beat butter, eggs and mashed banana together. Once butter is creamed add cinnamon and entire box of yellow cake mix. Whip until blended evenly.
  • Pour batter into prepared loaf pan and bake for 50-55 minutes or until cake tester comes out dry. {mine was done in 50 minutes}
  • Remove and set on rack to cool.
  • When cake is cooled completely top with frosting.
