Gingerbread Overnight Oats
Gingerbread Overnight Oats are rich with molasses and fall's warming spices. Think old-fashioned gingerbread for your morning oatmeal that is gluten-free and is ready when you wake up! Not to mention it makes your whole house smell amazing.

- 1 1/2 cups gluten-free steel-cut oats
- 1/4 cup coconut sugar
- 1/4 cup mild molasses
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- 6 cups water
Toppings:
- Raisins
- Chopped walnuts
- Unsweetened Almond Milk
In a slower cooker add oats, coconut sugar, molasses, ginger, cinnamon, cloves, nutmeg, and water.
Cover and let cook for 8 to 9 hours.
Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning.
Top with raisins, chopped walnuts and a drizzle of unsweetened almond milk.
