Paleo Molasses Sweet Potato Casserole
Paleo Molasses Sweet Potato Casserole is sweet creamy and delicious, but also very nutritious. Sweet potatoes are a great source of healthy carbohydrates, beta carotene, vitamin C, manganese and potassium. Combined with the fat from the walnuts, this dish will fill you up and leave you very satisfied.

Casserole:
- 3 medium sweet potatoes {1lb.} peeled and cubed
- 6 small carrots {1/2lb.} peeled and cubed
- 2 tablespoons unsalted butter
- ½ cup coconut cream
- 1 teaspoon grated organic lemon
- 2 tablespoons molasses
- ½ teaspoon dried ginger
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Topping:
- ¾ cup chopped walnuts
- 1- teaspoon ground cinnamon
- 3 tablespoon melted butter
- 3- tablespoon maple syrup
Preheat oven to 350°
Butter a 5-cup casserole dish
In a large saucepan, combine the sweet potatoes, and carrots. Cover with cold water a pinch of salt and bring to boil. Simmer for 10-12 minutes or until you can easily pierce potato and carrots with a fork.
Drain and return to pan. Mash potatoes and carrots. You can do this by hand or run through food mill or ricer.
Stir butter, coconut cream, lemon zest, molasses, ginger, salt and pepper into sweet potato mix.
Place sweet potato mix in casserole dish. Set aside.
