Preheat oven 325°
Line a small baking sheet with foil for easy clean up
Place oats, walnuts, coconut flakes, almonds, chia seeds and cinnamon in a medium bowl and stir to combine
Toss in melted coconut oil and maple syrup, stir to coat ingredients evenly.
Spread on baking sheet and bake for 20 minutes, remove add in pumpkin seeds toss and cook an additional 10 minutes. Do not let granola mix burn.
Remove and let cool, before storing in an airtight container for up to a week
