Pumpkin Pesto

Ingredients

  • 1 cup fresh Parsley
  • 1 cup of Basil
  • 1 cup Pumpkin Puree
  • 1/3 cup salty shelled pistachios
  • 1/4 cup finely grated Parmesan cheese
  • 2 tablespoons honey
  • 2 garlic cloves minced
  • 1/2 lemon juiced
  • Pinch of kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  • Add all ingredients except olive oil to food processor and run till combined.
  • Through tube add olive oil while processor is running.
