Lemon Vinaigrette:
- 1/4 cup extra-virgin olive oil
- 2 tablespoon fresh lemon juice 1 large lemon or 2 small
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
Salad:
- 1/4 cup chopped Italian parsley
- 1 small head fennel trimmed and diced
- 2 ribs celery trimmed and diced
- 1/2 cup of red onion diced
- 2-3 cups mixed greens
