Ingredients

  • 4 6 ounce salmon filets
  • 1/4 cup apricot preserves/jam
  • 1 tablespoon stone ground mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons ginger grated
  • 2 teaspoons garlic grated

Instructions

  • In a small bowl whisk together apricot preserve, grainy mustard, Dijon mustard, soy sauce, lime juice, ginger and garlic until blended.
  • Place your salmon filets in a shallow baking dish, gently pour apricot mixture over top. Let it sit for the time that it takes your oven to preheat,10 minutes or up to 30 minutes. (Place it in the refrigerator if you are letting it sit more than 10 minutes.)
  • Preheat your oven to 400°F.
  • Place the baking dish in the oven and bake for about 10 minutes.
  • Serve with your favorite side dishes.

Notes

  • Storing: Leftover cooked salmon will keep in the refrigerator for up to three days. Store it in airtight containers for maximum freshness.
  • Reheating: Reheat the salmon in the oven at 350°F until heated through, but don't overcook it or the fish will be dry.
