Apple Fig Baked Oatmeal Cups

Apple Fig Baked Oatmeal Cups are perfect for a fall-themed, over-the-top breakfast or dessert. This recipe has limited ingredients to highlight the fall fruit, and it's super simple to assemble. Perfect to pair with yogurt for brunch, or vanilla ice cream for dessert!

Ingredients

Filling:

  • 2 baking apples peeled, cored and thinly sliced (I used Honeycrisp)
  • 10 fresh figs stemmed and sliced
  • 1/4 cup granulated sugar
  • 1/8 teaspoon ground cardamon
  • 1 tablespoon freshly squeezed lemon juice

Topping:

  • 1/3 cup all-purpose flour gluten free flour for gluten free recipe
  • 1/3 cup old-fashioned oats gluten free for gluten free recipe
  • 1/4 cup firmly packed brown sugar
  • 4 tablespoons unsalted cold butter cut into small pieces

Instructions

  • Preheat oven 350°.
  • Butter four 1 cup baking cups.
  • In a large bowl toss together apples, figs, sugar, cardamon and lemon juice.
  • Distribute apple mix evenly into cups.
  • In same large bowl add flour, oats, sugar and butter. Use your hands to gently combine. Breaking apart butter if it starts to mound together.
  • Evenly distribute flour, oat mix over each cup. Gently press down.
  • Place cups on baking sheet and bake for 35 minutes, or until apple mix is bubbling around perimeter of cups.
  • Remove, let cool.
  • Enjoy.
  • Great with yogurt in the morning or vanilla ice cream in the evening.
