Pecan Balls

Pecan Balls are little melt in your mouth buttery-nutty cookies of deliciousness. Perfect for the holidays or any day, they are also known as Mexican wedding cake cookies. A very easy recipe for even the beginner baker.

  • 1 cup unsalted butter room temperature
  • 1/4 teaspoon salt
  • 1/2 cup confectioners' sugar
  • 2 teaspoons vanilla
  • 1 cup pecan chips you can process whole pecans in food processor
  • 2 cups all-purpose flour sifted (substitute all purpose gluten free for gluten free cookies)


  • 1/3 cup confectioners' sugar for rolling balls



  1. Preheat oven to 350° and line sheets with silicone baking pads or parchment.
  2. In an electric mixer blend butter, salt, vanilla and 1/2 cup confectioners' sugar until smooth.
  3. Gradually add pecans and sifted flour to mixer while running on low.
  4. Once batter comes together turn off mixer.
  5. Make 1" balls with dough, rolling to smooth, place on baking sheets with 2" in between.
  6. Bake 1 sheet at a time in upper third of oven for 12-15 minutes. Until bottom is lightly brown.


  1. Place final 1/3 cup confectioners' sugar in a bowl.
  2. Take warm cookies and drop into confectioners sugar using fingers gently toss to coat cookies with sugar.
  3. Place cookies on a rack to cook completely.

Recipe Notes

Store in an air tight container for 2 weeks or freeze for up to 1 month.
