Ingredients

Salad

  • 4 cups mixed greens
  • 1/2 cup of sprouts or microgreens I used kale
  • 1/2 cup of blueberries
  • 1/2 cup of diced cucumber
  • 1/4 cup of salted pistachios shelled
  • 1/2 cup of crumbled feta omit for paleo and vegan diets

Dressing

  • tbsp.  champagne vinegar
  • teaspoon  dijon mustard
  • 1/2  teaspoon  kosher salt
  • 1/4  teaspoon  Ground Black Pepper
  • 1/2  cup  extra virgin olive oil

Instructions

Salad

  1. Place ingredients in a large serving bowl.
  2. Add as much dressing as you like to taste, toss and enjoy.

Dressing

  1. Whisk together vinegar, Dijon mustard, kosher salt, and freshly ground pepper in a small bowl. Gradually whisk in olive oil until blended.
  2. Store in refrigerator for up to one week in an air tight container.
