Ingredients

  • 1 small sweet potato
  • 1 tbsp extra virgin olive oil + more for drizzling
  • 1/4 tsp black pepper
  • 1 radish
  • 1 ounce goat cheese crumbled
  • 1 small bunch of microgreens about 1 ounce
  • lemon zest

Instructions

  • Preheat oven to 425°
  • Wash sweet potato, prick with fork and place on small baking sheet
  • Drizzle potato with olive oil and rub to cover the entire potato
  • Bake potato for 40 minutes or until potato is easily pierced with fork.
  • Remove from oven and let sit until cool to touch.
  • Cut potato in half and sprinkle with pepper.
  • Top with sliced radish, crumbled goat cheese and microgreens.
  • Add lemon zest and drizzle of olive oil.
