Vinaigrette:
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 2 teaspoons honey
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground black pepper
Salad:
- 5 ounces organic mixed green salad
- 2 ripe peaches pitted and sliced
- 2 ounces thinly sliced prosciutto torn into pieces {4 slices}
- 4- ounce goat cheese crumbled
Salad:
In a large salad bowl toss together mixed greens and vinaigrette. Making sure greens are evenly coated.
Divide greens among four salad bowls.
Top each bowl evenly with peach slices, goat cheese, and prosciutto.
