Tomato Blueberry Tofu Salad

Ingredients


Dressing:

  • 1/4 cup olive oil
  • 3 tablespoon red wine vinegar
  • 1 tablespoon sake
  • Pinch of sea salt


Salad:

  • 3 Heirloom Tomatoes cubed (about 4 cups)
  • 1/4 cup organic blueberries
  • 1 shallot trimmed, and thinly sliced
  • 1 - 12 ounce package of soft tofu
  • 1 tablespoon fresh chives chopped

Instructions

Dressing:

  • In a small mixing bowl, whisk together olive oil, vinegar, sake and sea salt.
  • Pour dressing over tomato mixture.

Salad:

  • In a large bowl toss together tomatoes, shallots and blueberries. Pour dressing over and stir to combine.
  • In a large serving bowl place tofu in center and then pour tomato, blueberry mixture over and around tofu.
  • Top with chopped chives.
  • Serve
