Tomato Blueberry Tofu Salad

Ingredients
Dressing:
1/4
cup
olive oil
3
tablespoon
red wine vinegar
1
tablespoon
sake
Pinch
of sea salt
Salad:
3
Heirloom Tomatoes
cubed (about 4 cups)
1/4
cup
organic blueberries
1
shallot
trimmed, and thinly sliced
1 - 12
ounce
package of soft tofu
1
tablespoon
fresh chives
chopped
Instructions
Dressing:
In a small mixing bowl, whisk together olive oil, vinegar, sake and sea salt.
Pour dressing over tomato mixture.
Salad:
In a large bowl toss together tomatoes, shallots and blueberries. Pour dressing over and stir to combine.
In a large serving bowl place tofu in center and then pour tomato, blueberry mixture over and around tofu.
Top with chopped chives.
Serve
