Grilled Buffalo-Barbecue Shrimp with Blue Cheese Dip

Buffalo Grilled Shrimp with Blue Cheese Dip is a spicy, savory, oh my god that is good kind of dish. Ready in less than 15 minutes makes it the perfect weeknight dinner, or the OMG I have guests coming over appetizer.

Ingredients


Blue Cheese Dip:

  • 1/2 cup light sour cream
  • 1/4 cup crumbled blue cheese
  • 2 tablespoons finely chopped scallions {about 2}
  • 2 tablespoons finely chopped flat-leaf parsley
  • 2 teaspoons fresh lemon juice


Shrimp:

  • 14 jumbo shrimp 1 1/2 to 2 pounds, peeled, and deveined
  • 1 teaspoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons unsalted butter melted
  • 1/4 cup hot sauce such as Frank’s RedHot

    Blue Cheese Dip:
  • Add all ingredients in a small bowl and stir to blend. Set aside.

Shrimp:

  • Heat grill or grill pan to medium heat.
  • Stir together butter and hot sauce in a large bowl. Set aside.
  • Toss shrimp olive oil, kosher salt and black pepper in bowl. Make sure shrimp is evenly coated.
  • Grill shrimp, turning once, until just cooked through, 3-4 minutes per side.
  • Remove shrimp from grill and directly drop into hot sauce mix.
  • Stir shrimp to coat and enjoy.

Notes

If serving as an appetizer serve shrimp with individual skewer so guests can dip in blue cheese dip
