Lemony Chickpea and Lentil Salad

Cook the Lentils

Cook the lentils in boiling water until tender, then drain and cool to room temperature.

Combine Ingredients

Place the lentils, celery, green onions, chickpeas, tomatoes, parsley, and olives in a bowl and stir to toss.

Make the Dressing

Combine olive oil, lemon juice, mustard, garlic salt, and fresh garlic in a mason jar or bowl and shake well.

Dress the Salad

Toss lemon dressing over the salad and add salt and pepper to taste. Then cover and let it rest.


Stir the lentil salad again, and serve at room temperature or chilled.
