Homemade Cheddar Cheese Meatballs

Ingredients

  • 1 pound lean ground beef
  • 1 small yellow onion peeled, trimmed and grated {about 1/2 cup}
  • 2 eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 pound hard cheddar cheese cut into 16-1” cubes

Instructions

  • Preheat oven to 350°
  • Line a large baking sheet with parchment paper
  • In a medium bowl grate onion, you want all the juice from the onion to be in the bowl. Add eggs, garlic powder, sea salt, and ground black pepper.
  • Whisk with a fork to combine.
  • Add ground beef to the bowl and using your hands blend everything together.
  • Shape ground beef mix around a portion of cheese cube. Making 2 1/2” meatballs.
  • Place meatballs on parchment line baking sheet and bake for 30 minutes.
