Homemade Cheddar Cheese Meatballs

Ingredients

pound
lean ground beef
1
small yellow onion
peeled, trimmed and grated {about 1/2 cup}
2
eggs
1/2
teaspoon
garlic powder
1/2
teaspoon
sea salt
1/4
teaspoon
ground black pepper
1/4
pound
hard cheddar cheese
cut into 16-1” cubes
Instructions
Preheat oven to 350°
Line a large baking sheet with parchment paper
In a medium bowl grate onion, you want all the juice from the onion to be in the bowl. Add eggs, garlic powder, sea salt, and ground black pepper.
Whisk with a fork to combine.
Add ground beef to the bowl and using your hands blend everything together.
Shape ground beef mix around a portion of cheese cube. Making 2 1/2” meatballs.
Place meatballs on parchment line baking sheet and bake for 30 minutes.
