Baked Cheddar Cheese Meatballs are a quick and easy to prepare and have a sharp cheddar cheese center. Serve with a sugar-free marinara sauce and you have the perfect family dinner.
All hail the meatball! Meatballs are such a fabulous food. I mean really they are rather a genius little food. Balls of protein filled with herbs and spice and everything nice. What is not to love about that.
To step up the love game I added a bit of cheese in the center of these meatball delights. Cuz really let’s face the facts, a bit of cheese makes everything taste better!
You see these meatballs are creation because of husbands over purchasing at Costco.
Can you relate? Does your husband ever go to the store and come home with an abundance of stuff that you will NEVER be able to eat even if you are feeding the local football, team? Well yes, mine does and this time he came home with 4 pounds of ground beef. Really four pounds of ground beef, husband of mine, why-o-why?
So, of course, I just knew meatballs would be in our future. With a bit of beautiful white cheddar cheese I had picked up at the market, a couple of eggs from my chickens, and one grated yellow onion I had myself 16 meatballs to serve to family. I served them with some sugar-free marinara sauce, and a mixed green salad. Perfect healthy balanced weeknight family dinner.

Homemade Cheddar Cheese Meatballs
Ingredients
- 1 pound lean ground beef
- 1 small yellow onion peeled, trimmed and grated {about 1/2 cup}
- 2 eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/4 pound hard cheddar cheese cut into 16-1” cubes
Instructions
- Preheat oven to 350°
- Line a large baking sheet with parchment paper
- In a medium bowl grate onion, you want all the juice from the onion to be in the bowl. Add eggs, garlic powder, sea salt, and ground black pepper.
- Whisk with a fork to combine.
- Add ground beef to the bowl and using your hands blend everything together.
- Shape ground beef mix around a portion of cheese cube. Making 2 1/2” meatballs.
- Place meatballs on parchment line baking sheet and bake for 30 minutes.

Haha, I can totally relate! My hubby (who claims to hate shopping) loves Costco way too much and will randomly come home with massive quantities of stuff! We love meatballs around here and the fact that these are stuffed with cheddar makes them completely irresistible!
