Blueberry Almond Chocolate Bars

Ingredients


Bars:

  • 1 cup almond flour
  • 2/3 cup tapioca flour/starch
  • 1/3 coconut flour
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 medium banana mashed {about 1/3 cup}
  • 1/3 cup almond butter
  • 1/3 cup pure maple syrup
  • 1/2 cup blueberries
  • 1/2 cup almond slivered
  • 1/4 cup every day life semi sweet chocolate chips


Topping:

  • 1/4 cup every day life semi sweet chocolate chips

Instructions

Bars:

  • Preheat oven to 350°. Line a 8 x 8” pan with parchment.
  • In a large bowl stir together Almond flour, tapioca, coconut flour, cinnamon and baking soda.
  • In another large bowl add banana, almond butter, maple syrup and whisk to blend.
  • Pour banana mixture into flour mixture and stir to combine. Once combined stir in almonds and chocolate chips.
  • Then add in blueberries stirring gently to combine. Almost folding dough from the outside over top of itself.
  • Pour dough into prepared pan, gently pushing down with the back of spoon or measuring cup, pressing dough into the corners.
  • Bake for 20-22 minutes, until golden brown on top.
  • Remove and let cool.

Topping:

  • When cool, place 1/4 cup of enjoy life semi sweet chocolate chips in a small bowl microwavable bowl and cook in microwave for 1 minute. Stir completely, if needed to melt further microwave an additional 30 minutes. Stir until smooth and then drizzle over top of bars back and forth.
  • Cut into squares and enjoy.
  • Store in the fridge, covered for several days.
