Blueberry Almond Chocolate Bars make a great breakfast bar or a delicious dessert.  You can enjoy them guilt free because they are Gluten Free, Dairy Free, Paleo and Vegetarian made with healthy clean ingredients.

I have a bit of a problem and I happen to notice this problem while making this recipe.

When I went to measure out the maple syrup from the already open bottle that I had in the fridge, I noticed that it only had a tablespoon maybe two left in the bottom.  Now when a bottle of maple syrup only has a small amount at the bottom one must be very patient while it waits to pour out.

Just for a moment I thought about just throwing the old bottle away and not wasting the time, I mean I was going to have to open up the new bottle to get the right amount anyway, but I just couldn’t.

I don’t know why I am this way, but I alwyas feel like I have to use it all or I feel a bit guilty if I don’t.

I thought about and I blame my mother.

Poor Mom she always gets blamed, but she is the same way and when I was a girl everything was in moderation and we used EVERYTHING before we got something new.

Blueberry Almond Chocolate Bars-3

Even though I had to wait on my maple syrup to pour, these bars take no time to pull togeth and let me tell you I am crushing on these Blueberry Almond Chocolate Bars.

I love one in the morning with my coffee because they are loaded with potassium, protein, antioxidants and deliciousness, but I also love one in the afternoon as a snack to help me get to dinner time, and they are also great as a dessert after dinner to satisfy my sweet tooth.

I eat them guilt free because I only used the cleanest ingredients in these bars so they are gluten free, dairy free, paleo and vegetarian.  Almond Flour, almonds and almond butter give a great dose of protein to fill you up, and the banana and maple syrup give the bars their sweetness and potassium which is great for our muscles.

Blueberry Almond Chocolate Bars

Ingredients
  • [br][b] Bars:[/b]
  • 1 cup almond flour,
  • 2/3 cup tapioca flour/starch
  • 1/3 coconut flour
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 medium banana mashed {about 1/3 cup}
  • 1/3 cup almond butter
  • 1/3 cup pure maple syrup
  • 1/2 cup blueberries
  • 1/2 cup almond, slivered
  • 1/4 cup every day life semi sweet chocolate chips
  • [br][b]Topping:[/b]
  • 1/4 cup every day life semi sweet chocolate chips
Instructions
[br][b]Bars:[/b]
  1. Preheat oven to 350°. Line a 8 x 8” pan with parchment.
  2. In a large bowl stir together Almond flour, tapioca, coconut flour, cinnamon and baking soda.
  3. In another large bowl add banana, almond butter, maple syrup and whisk to blend.
  4. Pour banana mixture into flour mixture and stir to combine. Once combined stir in almonds and chocolate chips.
  5. Then add in blueberries stirring gently to combine. Almost folding dough from the outside over top of itself.
  6. Pour dough into prepared pan, gently pushing down with the back of spoon or measuring cup, pressing dough into the corners.
  7. Bake for 20-22 minutes, until golden brown on top.
  8. Remove and let cool.
[br][b]Topping:[/b]
  1. When cool, place 1/4 cup of enjoy life semi sweet chocolate chips in a small bowl microwavable bowl and cook in microwave for 1 minute. Stir completely, if needed to melt further microwave an additional 30 minutes. Stir until smooth and then drizzle over top of bars back and forth.
  2. Cut into squares and enjoy.
  3. Store in the fridge, covered for several days.

    I do the same thing – I can’t stand to waste anything. These bars would certainly be perfect for breakfast and snacking – I love the combination of blueberries and chocolate too.
