Radish Goat Cheese Sweet Potato Toast with Microgreens is the best way to enjoy a snack, lunch or serve to your friends as an appetizer. Take a break from the usual chips and try this fun, healthy and satisfyingly delicious snack.

Whether you’re wanting a snack to satisfy hunger or to feed your body after your latest workout, you want something that is a “good choice.”

This Radish Goat Cheese Sweet Potato Toast with Microgreens recipe perfect way to satisfy and give you high-octane energy.  Eating a snack between meals can curb hunger, but reaching for the right snack is the difference between a boost of energy or an afternoonslump.  

Crazy for Cruciferous.

I love me some cruciferous, and so should you!

They’re a good source of dietary fiber and contain vitamins K, C and E, folate, minerals such as potassium and calcium, and several carotenoids. Extensive research has been conducted on the potential impact of crucifers on various cancers.

Radishes are part of the cruciferous vegetable family (which includes broccoli, kale, cauliflower).

Radishes help as a natural cleansing agent for our digestive system helping to helping to break down and eliminate stagnant food and toxins that build up over time.

Microgreens: I am crazy for them!

I love me some microgreens.! They are just so easy to add to almost all recipes and they are uber good for you!

I used radish and broccoli microgreens in this recipe, but you can use what ever microgreen you like or can get your hands on at the store or farmers market.

 

This recipe is simple to prepare and takes minutes to assemble.

Perfect for a snack, a light lunch or served as an appetizer. 

I suggest using small sweet potatoes and try to pick potatoes that are consistent in shape. Once potatoes are cool enough to handle, cut them in half length wise. Sprinkle with pepper, and top with sliced radishes, crumbled goat cheese, and microgreens.  I drizzled the assembled sweet potatoes with olive oil and grated fresh organic lemon zest over the top.

Radish Goat Cheese Sweet Potato Toast with Microgreens recipe is the best way to enjoy a snack, lunch or serve to your friends as an appetizer.

Ingredients

  • 1 small sweet potato
  • 1 tbsp extra virgin olive oil + more for drizzling
  • 1/4 tsp black pepper
  • 1 radish
  • 1 ounce goat cheese crumbled
  • 1 small bunch of microgreens about 1 ounce
  • lemon zest

Instructions

  1. Preheat oven to 425°

  2. Wash sweet potato, prick with fork and place on small baking sheet

  3. Drizzle potato with olive oil and rub to cover the entire potato

  4. Bake potato for 40 minutes or until potato is easily pierced with fork.

  5. Remove from oven and let sit until cool to touch.

  6. Cut potato in half and sprinkle with pepper.

  7. Top with sliced radish, crumbled goat cheese and microgreens.

  8. Add lemon zest and drizzle of olive oil.

  9. Enjoy
