Blue Cheese Crusted Filet is a decadent easy and delicious dinner that is perfect for the family or a dinner party.  Cooking filet this way guarantees you the perfectly cooked, seasoned juicy steak.
There is nothing more I love than a juicy steak. Â As a kid growing up Sunday’s my Dad would cook up steaks on the grill, and my Mom would make a baked potato and salad to serve along side the steak. Â It was always the same the meal and the type of steak, T-bone. Â You see I was raised on red meat and I am still a huge fan, and am always finding delicious ways to serve it up. Â These Blue Cheese Crusted Filets, are oh my lordy good.
Have you ever had blue cheese on steak?  It is this perfect little party of flavors.
This dish is ready in 30 minutes, and let me tell you, your family and friends will be doing jumping jacks singing your praises and demandign you make this again and again.  Perfect served along a salad and bake potato if you want to go old school, or a more modern version with steam veggies and sweet potato fries.  However you serve it just make sure to let your steaks sit for at least 5 minutes before serving.
- Sauce:
- 2 tablespoons unsalted butter
- 3 garlic clove, minced
- 1 large shallot, chopped {about 3 tablespoons}
- 1 tablespoon fresh thyme, chopped
- ¾ cup low-sodium beef broth
- ½ cup dry red wine
- Topping:
- ½ cup crumbled Blue cheese
- ¼ cup gluten free panko bread crumbs
- 1 tablespoon fresh parsley, chopped
- Steak:
- 2 tablespoons unsalted butter
- 1 1/2 tablespoon kosher salt
- 1/4 teaspoon fresh ground pepper
- 4- 6 ounce filet mignon steaks
- About 1 hour before you plan on cooking steaks sit out on counter and sprinkle salt on each side.
- Melt butter in small skillet over medium-high heat. Add garlic, shallot, and thyme. Sauté until shallot is tender about 3 minutes. Add broth and wine. Boil until sauce is reduced to 1/2 cup around 12 minutes. Remove from heat and let cool.
- Set sauce aside.
- In a bowl combine Blue cheese, panko, and parsley add sauce once cool and stir to combine.
- Preheat broiler. Melt butter in heavy large skillet over medium-high heat. Sprinkle steaks with pepper.
- Add steaks to skillet and cook until browned, about 3 minutes for 1″ steak and about 5 minutes for 2″ steak, flip and cook an additional 3 or 5 minutes.
- Press cheese mixture onto top of steaks, divide equally.
- Broil until cheese browns, about 3-5 minutes.
- Let rest for 5 minutes before serving

I love bleu cheese but unfortunately I have celiac disease. Bleu cheese is not a true gluten friendly cheese. The recipe sounds out of this world!
