When the alarm rings in the morning and I have to start thinking about what I will eat for breakfast, past my coffee, I want something nutritious, high in protein and ideally already made. My Oatmeal Pistachio Strawberry Breakfast Bars hit the marks. Loaded with healthy whole grains, healthy fat, omega-3’s, potassium, magnesium and loads of protein make them super nutritious and a balanced macro breakfast.

So what did you do last night? Me I discovered The Late Late Show with James Corden YouTube Channel. Yep, have you seen it, it is so freaking funny. He calls the videos Carpool Karaoke and James runs around driving with musical celebrities and they sing together. SO FUNNY!
Needless to say, I lost several hours, but well worth all the laughing I got in!
I have been really trying to prepare recipes that are balanced with healthy fats, wholesome carbs, and protein. One area I struggle with is breakfast, mostly because I don’t like to prepare anything in the morning. I am not worth much until I have a cup of coffee in me and at least thirty minutes behind me.
So with my grumpy bedside manner having something already prepared in the morning is key to me eating a high protein nutrient breakfast. My Oatmeal Pistachio Strawberry Superfood Breakfast Bars, are a tasty, filling nutrient boosting recipe. The oats are a great carb source to give me an energy boost, the pistachios offer protein and healthy fats, the chia seeds are a source of Omega-3’s for heart health, the strawberries are a source of fiber and antioxidants and the cocoa nibs offer magnesium for our muscles.
Plus the taste damn good, which is a great selling point! I hope you give the recipe a try!

- Base:
- 2 cups old fashioned oats
- 3/4 cup shelled pistachios
- 4 tablespoons honey
- 1 tablespoon coconut oil
- 1 teaspoon kosher salt
- 1½ teaspoon cinnamon
- 1 1/2 bananas
- 1½ teaspoons vanilla
- 1 scoop Vanilla Whey Protein
- Topping:
- ½ cup old fashioned oats
- ¼ cup chopped pistachios
- 2 tablespoons chia seeds
- 1/4 cup cocoa nibs
- 1 cup fresh strawberries, hulled and quartered {about 10 medium strawberries}
- ¼ cup of unsweetened coconut-almond milk (or plain coconut or plain almond milk)
- ¼ teaspoon cinnamon
- Base:
- Preheat oven to 350°.
- Line 9 x 9 baking pan with parchment paper, lightly grease with coconut oil
- Add all ingredients into food processor until completely combined and wet, this may take several minutes.
- Pour into prepared pan and smooth out with off set spatula until evenly spread.
- Bake for 8-10 minutes.
- Topping:
- Combine ingredients in medium bowl and stir to combine.
- Removing pan from oven, spread topping evenly over and lightly press down into the base.
- Bake an additional 15 minutes

No need to feel guilty, they will also give you a little energy boost to fuel you until dinner.

I made a batch today, and I have to say these might be my favorite breakfast bars yet! I used freeze-dried strawberries (it’s Sunday and nobody wants to put on real clothes to go get fresh strawberries) and they’re super delish. Thanks for your wonderful recipes.
