Apple Fig Baked Oatmeal Cups

Apple Fig Baked Oatmeal Cups are perfect for a fall over the top breakfast or dessert. This recipe has limited ingredients to highlight the fall fruit, and super simple to assemble. Perfect to pair with yogurt for brunch, or vanilla ice cream for dessert.

While I was in Tuscany my group went on a hike. We weren’t climbing through the fields and hills, but walking along a quiet road.  Past fields, homes, grape vines and olive groves

We saw a few hunters with their hounds out hunting rabbit and pheasant.

There is nothing like a freshly picked fig.

We saw caper plants growing out of old stone walls. We met a man walking a very cute donkey. We picked sweet grapes. But the highlight for me was when we walked past a very large fig tree with fruit just beginning to ripen. In Tuscany they don’t plant fig trees, they crop up and grow tall against south facing farm buildings and walls on their own.

We enlisted Steve the tallest in our group to pull down the lowest branches so we could pick them and eat them.

Picking figs still warm off the tree, means you try your best not to eat too many.

Several days later when we were touring the Parmigiano-Reggiano farm in Modena. we saw another large fig tree growing against an old barn. A few of us couldn’t resist. We picked as many figs as we could reach,  We carried them back for all of us to enjoy while we sampled Parmigiano-Reggiano.

How lucky for me that figs were coming into season while I was in Italy.  I got to enjoy their tuscan delicacy freshly picked, still warm from the sun.

Now that I am home, its apple season!  What a magical thing to combine these two delicious fruits, apples and figs.  I wanted to make a simple recipe, using only ingredients that would highlight the perfect sweetness of these two fruits.

These Apple Fig Baked Oatmeal cups can be made a day ahead and reheated or served cold.

Apple Fig Baked Oatmeal Cups

Prep Time 10 minutes
Cook Time 35 minutes

Ingredients

Filling:

  • 2 baking apples peeled cored and thinly sliced (I used Honeycrisp)
  • 10 fresh figs stemmed and sliced
  • 1/4 cup granulated sugar
  • 1/8 teaspoon ground cardamon
  • 1 tablespoon freshly squeezed lemon juice

Topping:

  • 1/3 cup all-purpose flour gluten free flour for gluten free recipe
  • 1/3 cup old-fashioned oats gluten free for gluten free recipe
  • 1/4 cup firmly packed brown sugar
  • 4 tablespoons unsalted cold butter cut into small pieces

Instructions

  1. Preheat oven 350°.
  2. Butter four 1 cup baking cups.
  3. In a large bowl toss together apples, figs, sugar, cardamon and lemon juice.
  4. Distribute apple mix evenly into cups.
  5. In same large bowl add flour, oats, sugar and butter. Use your hands to gently combine. Breaking apart butter if it starts to mound together.
  6. Evenly distribute flour, oat mix over each cup. Gently press down.
  7. Place cups on baking sheet and bake for 35 minutes, or until apple mix is bubbling around perimeter of cups.
  8. Remove, let cool.
  9. Enjoy.
  10. Great with yogurt in the morning or vanilla ice cream in the evening.
