Holy Crap it is the end of August.  Where has time gone? Is it just me or does time go by faster as we get older, and do I sound like my Mom by saying that?

I swear it was just June 1st and I was all excited for summer to being, and now it is almost the beginning of fall.  Before you know it we will be stuffing the turkey.  Well, even though I am testing pumpkin recipes for the blog I am not ready for Thanksgiving just yet.

So I am holding on to summer with a tight double fisted grip and making sure that I take full advantage of all the summer produce while it continues to show up at the market.  I plan on enjoying the summer peaches, corn, tomatoes and peppers for as long as I can.

I am all about the summer peaches and enjoying them as long as I can while they are in season.  Salty prosciutto pairs perfectly with sweet juicy peaches.  Topped with a fresh lemon honey vinaigrette and you have the perfect fresh and light summer salad.

Peach Prosciutto Mixed Green Salad

This Peach Prosciutto Mixed Green Salad is a light, sweet, and salty salad recipe. This salad mixes summer ripe peaches, thinly sliced prosciutto with creamy goat cheese and topped with a lemon honey vinaigrette.
Ingredients
  • [br][b]Vinaigrette:[/b]
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons honey
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • [br][b]Salad:[/b]
  • 5 ounces organic mixed green salad
  • 2 ripe peaches, pitted and sliced
  • 2 ounces thinly sliced prosciutto, torn into pieces {4 slices}
  • 4-ounce goat cheese, crumbled
Instructions
[br][b]Vinaigrette:[/b]
  1. Add all ingredients to a small bowl, whisk to combine. Set aside.
[br][b]Salad:[/b]
  1. In a large salad bowl toss together mixed greens and vinaigrette. Making sure greens are evenly coated.
  2. Divide greens among four salad bowls.
  3. Top each bowl evenly with peach slices, goat cheese, and prosciutto.
  4. Serve and enjoy.
