I think I have said here before that breakfast is my favorite meal of the day. I pretty much love all breakfast foods.. actually, I do love all breakfast foods. BUT, and it’s a big but, I am not a morning person. Like not at all. It is a bit of a joke with my family.
For instance, when I tell someone I am not a morning person and everyone who lives with me does that “what an understatement look”. So… it is a bit of problem, me not being a morning person, but loving morning food.
My solution is making ahead fabulously delicious brekkie food. Casseroles, Muffins, and Frittatas are my go to choices.
One of my big breakfast recommendations is lots of protein. I am a true believer that if you start your day off with a good dose of protein, you jump-start your metabolism as well as give your body the tools in needs to conquer the day both physically and mentally.

I love leeks and mushrooms together. They are the perfect little savory flavor combination. Leek Mushroom Egg White Frittata
Ingredients
- 1 tablespoon olive oil divided
- 2 medium leeks whites and pale green parts only, chopped
- 8 ounces baby bella mushrooms thinly sliced
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon ground black pepper
- 2 cups of AllWhites 100% Liquid Egg Whites or 8-9 egg whites
- 1/2 cup creme fraiche or sour cream
- 2 tablespoons coarsely chopped flat-leaf parsley
- 1/2 cup shredded Feta cheese
- 1/4 teaspoon Red pepper flakes
- 1 tablespoon Sriracha {optional}
Instructions
- Place a rack in upper third of oven; preheat to 400°.
- Heat 1 tablespoon oil in a large ovenproof skillet {I used cast iron} over medium heat. Add leeks; cook, stirring often, until softened, about 3-4 minutes. Add mushrooms, salt and pepper and cook, stirring often, until softened and all liquid has evaporated, 5-6 minutes.
- Whisk together egg white and crème fraîche and gently add to leek mixture and stir to combine. Cook for 3 minutes.
- Sprinkle the top with feta, parsley, and red pepper flakes.
- Put skillet in oven and bake, uncovered, for 8 to 10 minutes.
- Let cool until the sides start to release from pan. Drizzle top with Sriracha and serve from pan or use a rubber spatula to loosen and slide onto a serving plate.

I used to purchase the carton egg whites all the time at the grocery store. Then I sort of got out of it, but I’m not sure why because I really do love this product. Your fritatta looks amazing and now I’m adding leeks and carton egg whites to my grocery list.

My favorite way to enjoy egg whites is in a sweet potato hash.
I love putting lots of fresh herbs and veggies from the garden, chives or parsley, shallots and either sweet red peppers or jalapenos to jazz it up.
